Fried Rice

Delicious Fried Rice with the taste of the restaurants! Great as a side dish or easily converts to a main dish with the addition of some protein (we added our Marinated Fajita Chicken and really enjoyed our meal). Tastes just like takeout but without the cost and time of delivery. We add several different items to this when we make it to change up the flavors and go with whatever we’re making for dinner.

The Ingredients

“Leftover” rice is the key to making this dish taste like the restaurants. We always make an extra couple cups when we cook up rice so we can follow-up with this recipe. You’ll need 2-3 cups.

Chop the green onions into the green part and chop the water chestnuts (after you drain them!) even smaller than the slices that come in the can.

The rest of the items are pretty normal, 3 eggs (whisked), 3 Tbsp Soy Sauce, 2 Tbsp dry or very dry Sherry and some vegetable oil.

Choose your protein if you want to make this a full meal. We cooked it with chicken, but anything you have already cooked can go in, pork, beef, chicken or tofu all work great.

Our vegetables also depend on what we have around the house. Peas, carrots and edamame are all great in this recipe!

The Process

Only one pan (or wok if you have it!) to clean once this one is done. Choose a heavy fry pan if you don’t have a wok.

Place enough vegetable oil in the pan to coat the bottom and start heating the pan and oil over low heat.

When hot (but not smoking hot!), add the whisked eggs and scramble them.

Add the Soy Sauce and Sherry to the pan and let them warm up.

Once warm, add the rice to soak up the flavors and start browning, stirring often.

Add the rest of the veggies and your protein if you chose to use one and cook until heated through.

Ingredients

  • 2-3 cups Day Old Rice

  • 3 Eggs – whisked

  • 1 Tbsp Vegetable Oil

  • 1 bunch Green Onions – chopped into the green

  • 1 can Sliced Water Chestnuts – chopped into smaller pieces

  • 3 Tbsp Soy Sauce

  • 2 Tbsp Dry or Very Dry Sherry

  • Optional 1/4 lb protein (Chicken, Pork or Beef) already cooked

Directions

  • Heat Vegetable Oil in a wok or heavy fry pan over low heat
  • Scramble Eggs in oil until cooked. Increase heat to medium
  • Add Soy Sauce and Sherry and stir until hot
  • Add Rice and stir as it soaks up liquids. Keep stirring until heated through
  • Add veggies and protein. Stir until hot and serve

Notes

  • Great with chicken, pork or beef. Also good with lots of different vegetables. Use whatever you like and have on hand! We like peas, carrots, edamame, tofu, bean sprouts, etc.
