It’s such an easy appetizer. You can make it ahead of time and just serve with fresh cut bread. We really like a light bread like French so the flavor of the dip comes right through! Not needing an oven or any way to heat it when you get to the party is a definite bonus, and it’s ready to serve immediately instead of waiting for your turn with the other hot apps.

It also makes a large amount! We love to take this when we’re wine tasting with a group. The bread helps with the alcohol intake, and the flavors are spectacular with the wine. A single batch is also plenty for a party… no need to double or take multiple apps for your share!

Hints & Tips

I like to use frozen spinach that is already chopped up. The smaller pieces are what you want in the dip, so why not save yourself a step as you are preparing it?

Chop the green onions and water chestnuts into small pieces (much smaller than the sliced water chestnuts in the can). You don’t want a large piece in any bite to take over the flavor of the dip.

Mix the sour cream, green onions, water chestnuts and dry leek soup mix together first. The hot spinach really brings the flavors together and allows the soup to mix in with the sour cream so the whole dip shares the same flavoring. Make sure you mix well so there aren’t any pockets of the dry soup mix to make a surprise bite for an unsuspecting guest!

Ingredients

  • 10 oz Frozen Chopped Spinach

  • 8 oz can Sliced Water Chestnuts – drained and diced into small pieces

  • 1 bunch Green Onions – cleaned and sliced into small pieces

  • 16 oz Sour Cream

  • 1.8 oz package Leek Soup Mix

Directions

  • Prepare spinach as directed on the package and drain completely
  • Mix sour cream, leek soup mix, onions and water chestnuts. Stir completely
  • Add spinach while still warm and stir again. Make sure items are well mixed so every bite includes a bit of every ingredient
  • Serve with bread, crackers or vegetables
