Easy Cheesy Cauliflower

I’ll bet this would work with your kids (or picky spouse) as well…

Cleaning the Cauliflower

This is the most difficult part of the recipe. I told you it was easy!

Just trim all of the leaves away from the base of the cauliflower. You’ll probably have to pull some from between the cauliflower florets. Just make sure all green is gone so all you have left is the white, edible part of the cauliflower.

I like to trim the base out as well. It isn’t as good to eat as the florets (the parts that look like little white trees when you pull them off), and takes a long time to soften as you boil the cauliflower, so the more you can remove, the better your cauliflower will be!

The Process

Place the trimmed cauliflower in a large stockpot. Fill the pot about 2/3 to the top of the cauliflower and start to boil. After about 10 minutes, start testing the cauliflower with a sharp knife every couple minutes. Once the knife penetrates the cauliflower easily, it’s soft enough to eat!

Drain the cauliflower completely. Add American cheese slices over the top of the hot cauliflower, cover the pan, and let them melt for a minute or two. Don’t let them melt too long, though, or the cheese turns into basically and orange milk at the bottom of the pan instead of covering the cauliflower.

Remove the lid and serve!

We served our cauliflower with our Herbed Butter Beef Tenderloin sides of Sautéed Mushrooms and Onions, a Wild Rice Hotdish, and our Balsamic Arugula Salad for a very fancy and enjoyable dinner!

Ingredients

  • 1 head of Cauliflower

  • 5 slices American Cheese

Directions

  • Trim cauliflower by cutting off all leaves and a portion of the base as well
  • Place in a large stockpot and fill with water until about 2/3 of the way up the cauliflower
  • Boil until tender. Start checking with a sharp knife at about 10 minutes. Once the knife pierces the cauliflower easily, it’s soft enough to eat. Depending on the size of the cauliflower, this could take anywhere from 10-18 minutes
  • Drain the cauliflower, cover with American cheese slices and cover to melt the cheese, about 2 minutes. Don’t cover too long or the cheese will run off the cauliflower
