Grilled Marinated Asparagus

Our Grilled Marinated Asparagus are quick to make and gives a great flavor on the grill. You can even reuse the marinade and it’s great on lots of different veggies… bell peppers, squash, zucchini, etc.

How Easy Is This?

Break one stalk of asparagus to find the breaking point, then cut the whole bunch at that same distance from the bottom in order to remove the “woody” ends. Put the top part of the asparagus in a dish to let them soak in the marinade. We really like to use a bread loaf dish since it’s long enough to hold the asparagus, but skinny enough to get all of them into the sauce!

All you do for the marinade is add a half bottle of Italian dressing (we like Kraft Zesty Italian), about a tablespoon of soy sauce and top it off with a light beer so the liquid covers the asparagus.

Stir every once in awhile and allow it to soak at least a half an hour and an hour or two is even better.

I grill the asparagus on the bottom rack over medium-low to low heat for 6 minutes, then transfer them to the upper warming rack for another 6 minutes. They turn out with some grill flavor, still a bit crunchy and avoids the char you get if you leave them on the lower rack for the full 12 minutes.

We served ours with our Marinated Flank Steak which takes the same amount of time on the grill so works great with this recipe!

Because the marinade doesn’t touch meat, you can actually save it and use it again in a few days. I wouldn’t keep it longer than a week, but it does give you the opportunity to not just use it once and dump it.

Ingredients

  • 1 lb Asparagus – tough ends removed

  • half bottle of Italian Dressing – we like Kraft Zesty Italian

  • 1 Tbsp Soy Sauce

  • Light Beer

Directions

  • Break/cut tough end of asparagus off then place the top end into a dish to marinade them
  • add half a bottle of Italian Dressing, 1 Tbsp Soy Sauce and a beer until marinade covers the asparagus
  • Allow to marinade at least a half an hour, stirring occasionally
  • Grill on a low to medium-low heated grill for 6 minutes on the lower grill and 6 additional minutes on the upper rack
