Parmesan Truffled Edamame

Ingredients for Parmesan Truffled Edamame

The biggest flavor in this dish is the white truffle oil. You can also use black truffle oil for a deeper flavor. It’s important to use the real stuff as the flavor is really quite a bit different than an infused oil. I know it’s expensive, but you use such a small amount that it lasts! Look for a label that states “White Truffle Oil” vs. a label claiming “Infused With Truffles”, “With Truffle Flavor”, etc. These aren’t the true oils. The flavor isn’t nearly as strong as necessary to take this one over the top!

Follow the directions on the package of edamame to prepare it first. We have found frozen edamame in bags anywhere from 8-32 oz. You want to use 8-10 oz. for this recipe, or double the other ingredients to use a 16 oz. bag. The 8-10 oz. works great for an appetizer with up to 4 people.

Grated parmesan works best for this recipe, because the smaller pieces stick to the edamame that much better. Shredded can work, but you have to pick some off the baking pan and put back on the edamame before you serve.

The best way to evenly distribute the flavors throughout the edamame is to put all of the ingredients into a gallon bag and then shake them together. Shaking everything together coats every piece of edamame to be in the oil and Parmesan cheese for a great flavor experience in every bite!

Make sure you provide an empty plate or bowl for the shells from the edamame.

Ingredients

  • 8-10 oz. Frozen Edamame – prepared as package suggests and drained

  • 1-1/2 Tbsp Olive Oil

  • 3/4 tsp White Truffle Oil

  • 1-1/2 tsp Garlic Powder

  • 5 Tbsp Grated Parmesan Cheese

  • 3/4 tsp Salt

  • 3/4 tsp Pepper

Directions

  • Preheat oven to 375F
  • Prepare edamame as package suggests and drain
  • Using a large bowl or bag, toss edamame with olive oil, truffle oil, garlic powder, parmesan cheese, salt and pepper. When edamame is well coated, place on a foil or silicone lined baking sheet
  • Bake for 5 minutes, flip the edamame over, then bake 5 more minutes. Allow to sit for 5 minutes before serving
