Roasted Red Potatoes

Crispy roasted red potatoes are the perfect side dish with just about anything. Garlicy with Italian flavorings, these are incredibly easy to make!

Super Easy to Make Roasted Red Potatoes

First, cut up the potatoes into bite size pieces. Since red potatoes come in such a wide variety of sizes, it might just be cutting them in half or quarters. If you get large potatoes like we had for our video, then it can take some extra cutting. Next, mix them with all the other ingredients. I’ve found the easiest way to evenly distribute the spices to the potatoes is by using a gallon baggie. Add everything together and give them a shake (make sure your bag is sealed really well!) Finally, bake the potatoes at 450F for about 30 minutes until they are tender inside and crispy outside. Doesn’t get much easier than that!

Why Red Potatoes?

The red potatoes have enough peel on them to get crunchy when you bake them. We have tried this with Yukon Gold potatoes, and they just don’t get the crunch. The peel on the Yukon Gold potato is too thin and can even start to slide off the pieces as they bake.

Russet potatoes, on the other hand, tend to have too thick of a peel. They get chewy instead of crispy, and the flavor doesn’t compliment the spices as well.

Overall, the red potato is just perfect for this recipe, and is a go to favorite for our family.

Crispy roasted red potatoes are the perfect side dish with just about anything. Garlicy with Italian flavorings, these are incredibly easy to make!

Ingredients

  • 1-1/2 – 2 lbs Red Potatoes – washed and cut into bite size pieces

  • 1 tsp Italian Seasoning

  • 1/2 tsp Salt

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Black Pepper

  • 1 Tbsp Olive Oil

Directions

  • Preheat oven to 450F
  • Mix all ingredients except for potatoes in a gallon bag. Make sure all dry ingredients are in the oil
  • Add potatoes and shake to coat the potatoes with the seasonings
  • Place potatoes on a greased baking sheet (or on a silicone lined baking sheet) and bake for 15 minutes. Flip potatoes, then bake for another 15 minutes. Potatoes are done when a fork easily pierces the potato and they are crisp on the outside!
