Prosciutto Wrapped Asparagus

Prosciutto wrapped asparagus with herbed cheese spread makes a statement as a side dish or appetizer. This recipe is quick to make, uses only three ingredients, and is keto friendly.

How to Choose the Best Asparagus

Good asparagus is crispy with bright green stocks and tips that hold their shape. Too often, asparagus is packed in ice for shipping and the tips can have freeze damage on them. You can recognize this if the tips look like they are melting off the spear. Avoid the freeze damage!

We don’t have a preference in size for this recipe. If the best looking asparagus is thin, grab them and just wrap multiple spears together in each bundle!

Tips for Making Prosciutto Wrapped Asparagus

Because they pick the bundle of asparagus at the same time, you can bend one to break the bottom of the asparagus off. This removes the “woody” part of the asparagus which is difficult to eat in a recipe like this. Put the top part of the spear back with the other asparagus in the bunch. Line the tips up, and cut the rest at that same point.

I like to cut the prosciutto in half the long way so it isn’t overly rich and it doesn’t get too thick on the asparagus. This lets it get crisp as you cook it and there won’t be spots inside where the meat is still chewy.

Once the prosciutto is cut in half, spread a thin layer of the spreadable herbed cheese. I use Boursin in the video. There are lots of choices, so whatever you like best. Take 1-3 asparagus (depending on how thick the spear is) and roll them in the prosciutto so the cheese is against the asparagus and the meat shows on the outside.

Cook the prosciutto wrapped asparagus at a convenient temperature to match your entrée or other side dishes. I recommend turning them once about halfway through the cooking time. Ideally, these cook at 350F for 15-20 minutes, depending on how thick your asparagus is. You can cook it as high as 450 for 10 minutes or so.

The asparagus is ready to eat when the prosciutto is crispy, the asparagus has some give (or limbers up…) but is still crunchy, and it becomes bright green.

Ingredients

  • 8-24 Spears of Asparagus

  • Herbed Cheese Spread (such as Boursin or Rondelè)

  • 4 slices Prosciutto

Directions

  • Preheat oven to 350F
  • Prepare asparagus by breaking the end from one spear, then lining the tip with the rest of the asparagus and slicing the remaining pieces at that same point.
  • Lay a slice of prosciutto flat on a cutting board. Cut it in half the long way and separate the halves.
  • Spread a thin layer of cheese on the half slice of prosciutto.
  • Take one large or up to three smaller spears of asparagus and roll it up in the prosciutto and cheese so the cheese is towards the asparagus and the meat is on the outside. You should roll it at an angle so the prosciutto covers a large portion of the asparagus.
  • Repeat until all asparagus are wrapped into bundles of prosciutto.
  • Place asparagus on a baking sheet (I use a silicone mat so they don’t stick and cleanup is easier) with space between the bundles so they cook evenly.
  • Cook at 350F for 15 minutes, turning once halfway through.
  • Serve immediately and enjoy!
