Yorkshire Pudding

Indulge in this English classic Yorkshire Pudding when you make a prime rib or other beef roast. The drippings mixed with the dough create a tasty side dish that matches perfectly with your meat!

Steps for Success with your Yorkshire Pudding!

Make sure you mix the batter slowly and thoroughly! Sift the dry ingredients to make sure there are no lumps. Slowly add the milk (add the 2 cups in 2-4 separate batches) and the eggs (1 at a time!)

Make your Yorkshire pudding batter ahead of time

Make this ahead of time because the dough needs time to chill in the fridge. The reaction between the cold dough and the super hot grease causes the pudding to rise. Cover the batter with a kitchen towel and keep in the fridge for several hours so it doesn’t dry out. We like to make the batter the morning of our beef dinner just to have it done and chilled for as long as possible.

Use a high temperature oven proof pan. I really like a cast iron or Dutch Oven type pan for this recipe. They allow the drippings to get super hot without any chance of hurting the pan.

When your meat gets done, add the drippings to your pan. Turn the oven up to 475F and put the pan and drippings into the oven as it preheats. Once your oven is at temperature, carefully remove the pan and add your batter. The hot drippings will allow your batter to react to the heat immediately and cause the soufflé to rise. If you watch the video, you can see I didn’t get the pan nearly hot enough, so my Yorkshire fell flat. It still tasted great, but didn’t have that wow factor! Do as I say, not as I do…

This is THE side dish for your prime rib. Delicious and indulgent… the perfect accompaniment for a beautiful piece of beef!

Ingredients

  • 2 cups Flour

  • 1/2 tsp Salt

  • 1/2 tsp Baking Powder

  • 2 cups Whole Milk (or 1 cup 2% Milk and 1 cup Half and Half)

  • 4 Eggs

Directions

  • Mix the salt and baking powder into the flour then sift the mixture into a large mixing bowl
  • Slowly add milk to the flour mixture (1/2-1 cup at a time) while mixing with an egg beater
  • Continue mixing while adding the eggs, 1 at a time
  • Refrigerate batter mixture with a kitchen towel covering the bowl for at least 3-4 hours
  • Once your prime rib is finished cooking, add the drippings from the roasting pan to your Dutch oven (or oven proof pan)
  • Turn oven up to 475F and place the pan and drippings in the oven as it heats up
  • Once oven is at 475F, carefully remove pan and add batter to the drippings
  • Bake at 475F for 15 minutes then turn the oven down to 350F and bake for an additional 15 minutes
