Chunky Guacamole

This chunky guacamole is absolutely perfect on our fish tacos. By leaving the ingredients in chunks instead of the normally smooth guacamole, the flavors shine through and make every bite a new experience! It is also fantastic with our chicken fajitas!

The Ingredients

Very ripe avocado is the key to a great guacamole. You don’t want them bruised so the green color shines through! They should be pretty soft to the touch (don’t squeeze them, or you’ll leave bruises.)

I like to look for skinnier green onions. You need to chop the big ones additional times and they fall apart when you’re mixing, so skinny is the way to go. Make sure the green tops look fresh as you’ll slice into them as well.

We don’t remove the seeds in our jalapeno. This adds a nice spice to the dish. If you don’t like the heat, remove the seeds and white ribs from the inside of the jalapeno and you’ll just have the flavor without much heat. You might save the seeds until you have everything mixed together so you can add a bit of heat if it comes out too bland in the end. Add them slowly, and the heat grows as they sit in the guacamole, so err on the conservative side when adding them back in.

The Process for Chunky Guacamole

Mix all ingredients other than the avocado. Make sure they are mixed well so all flavors will be represented in any spoonful.

I slice the avocado in the skin then scoop it into the bowl. This leaves smaller chunks which I then smash with a fork. The avocado is what holds all the chunks of the other ingredients together. Smash it until relatively smooth and mix the other ingredients in well.

Test the taste of the mixture. You might need some more salt. The salt really brings out the flavors in the other ingredients, so is very important.

Ingredients

  • 2 Avocados – diced

  • 1/3 cup Roma Tomatoes (2 tomatoes) – diced

  • 1/4 cup Green Onions (1 bunch) – diced

  • 1 Jalapeno – diced – seeds and ribs removed if you don’t want the spice

  • 3 cloves Garlic – minced

  • 2 Tbsp Lime Juice

  • 1 Tbsp Olive Oil

  • 1/4 tsp Sea Salt

  • 1/4 tsp Black Pepper

Directions

  • Mix tomatoes, green onion, garlic, jalapeno, lime juice, olive oil, salt and pepper in a medium mixing bowl
  • Once well blended, add avocado and smash into the other ingredients with a fork
  • Serve with chips or add to tacos or fajitas
