Iceberg Wedge Salad

A fantastic side dish or plenty of flavor to stand alone as an entrée! We love this Iceberg Wedge Salad with our Outback Ranch Dressing. Add your favorite salad fixings to make it your way.

Cutting the Lettuce

Pick your iceberg by giving it a squeeze. The lettuce should be firm and not give a whole lot. There shouldn’t be much “rust” around the core end and the leaves should be a nice green color.

Hit the core end against the counter a couple times and the core will slide out. I break some of the thick sections off around the core hole (the thick white areas can be bitter, so good to remove!)

Cut the head of lettuce in half then cut wedges from the cut side of one of the halves. A head of lettuce makes 6-8 wedges for entrée size salads, or double that for side salads.

Garnishes for our Iceberg Wedge Salad

We like to put our dressing on first. It gives a sticky layer that helps the other items stay on the wedge of lettuce. Our favorite dressing is an Outback Ranch Dressing (it’s our version of the Outback Steakhouse dressing that takes ranch to the next level!)

After the dressing, we like to keep it relatively simple, but there are no rules for what can go on these. For example, we use bacon, green onions, cherry tomatoes and a candied nut (we’re lucky in Boise to have a specialty nut shop that makes some great varieties). We had Maple Bacon Cashews for the video, but have used Maple Cayenne Pecans, Smokehouse Peanuts, etc. Anything to add a big flavor! Rene’ likes to put cheese on as well, because she loves her cheese! Blue cheese crumbles or feta are her favorites on the wedges. We also created a video to show exactly how we make these.

Ingredients

  • Iceberg Lettuce

  • Ranch Dressing

  • Green Onions – rough chopped

  • Grape Tomatoes – cut in half

  • Bacon – 2 strips cooked and crumbled

  • Candied Nuts

  • Feta or Blue Cheese Crumbles

Directions

  • Core the iceberg lettuce then cut in half. Slice wedges to whatever size you want from the cut side
  • Drizzle dressing over the wedge
  • Sprinkle garnishment over the dressing (green onions, bacon, tomatoes and nuts)
  • Add cheese if you want
