Garlic Gravy Steak Bites

These Garlic Gravy Steak Bites are a go to appetizer for our wine parties. Steak and red wine are made for each other. The buttery garlic sauce is amazing… Serve with some crusty bread to soak up all that flavor and watch your guests enjoy! They are also great as a main course over rice or mashed potatoes.

Ingredients for Garlic Gravy Steak Bites

Easy and so incredibly enjoyable, these steak bites are relatively quick to make and feed a crowd. You’ll want to pick a tender cut of steak to cube into the bite sized pieces. I have used stew meat (that’s what we used in the video!), but use a tenderizer with them to make sure they aren’t too chewy. Otherwise, a nice sirloin, ribeye, fillet, new york strip or other good cut works great. You can also get away with a beef roast. To make it tender enough, sprinkle the pieces with a meat tenderizer then poke it into the meat with a fork! You will need two pounds total, so I look for what is on sale at the meat counter for these since they all taste pretty much the same once they are finished.

I really like to serve these with a crusty bread. We typically pick up loafs of baguettes from our local grocery bakery, but ask for them still frozen instead of cooked the way they normally sell them. This allows us to bake them right when we want them, and warm crusty bread is magical with most meals!

Making Garlic Gravy Steak Bites

These really are easy to make. Just a couple of tips to make them even better!

First, start with very hot oil to cook these. You want an instant sear to keep these small pieces juicy while still having the flavor of the crust on the outside of each bite. Heat the oil to almost smoking before adding the meat and you’ll have much better luck!

Mix the seasonings together really well so you don’t end up with strong flavors on different bites instead of the overall flavor profile. Make sure each bite is seasoned well with the seasoning mix so they crust nicely as they cook.

Cook these in a single layer. Try to resist the urge to stir them… wait for them to release on their own (usually about 2 minutes or so) to get the best crust on the meat and not leave all the tasty coating on the pan instead of on the meat. I know I stirred them in the video, and I missed the opportunity to have even better bites for my friends! Once they release, flip them once and cook until they reach your desired level. There are lots of factors that can change your cooking time, from the size of your meat bites to the fat content in them to the heat of the oil when you initially place the meat in the pan. Typically, these need 3-5 minutes total to be done.

Our Appetizer Party

We served these with a few other appetizers to have a fun heavy appetizer party. The other apps we served were our Baked French Onion Appetizer, Buffalo Cauliflower Bites and Spicy Shrimp Spring Rolls. Enjoy!

Wine Time

These are perfect with a nice Cabernet Sauvignon. Steak and Cab are amazing together. Other strong red wines will work as well, such as a Syrah, Merlot or Petite Verdot.

Ingredients

  • 2 lbs Beef – cut into cubes. I use stew meat, roasts or steaks depending on what’s affordable!

  • 2 Tbsp Olive Oil

  • 4 cloves Garlic – minced

  • 1 tsp Salt

  • 1/3 cup Beef Broth

  • 1 tsp Onion Powder

  • 1 tsp Black Pepper

  • 1/2 tsp Brown Sugar

  • 5 Tbsp Butter

Directions

  • Cut beef into bite-sized cubes. Mix salt, pepper, onion powder and brown sugar together then season the steak bites with that seasoning mixture.
  • Heat oil in a heavy skillet until very hot (almost smoking). Add beef in a single layer and cook until they release. Flip the meat and cook until it reaches your preferred doneness. They usually take about 2 minutes until the release and 3-5 minutes total to cook.
  • Continue with additional batches until all meat is cooked. It’s very important to cook these in a single layer, so make as many batches as you need to cook all of the meat.
  • Remove the pan from heat and add all the meat back to the pan. Melt the butter and add the garlic to heat through. Add broth and put pan back over low heat for about 4 minutes to thicken the gravy and coat the steak bites.
  • Serve as an appetizer by pouring the contents of the pan into a serving bowl and serve with crusty bread.
  • Serve as a main course with mashed potatoes or rice.
