Bourbon Pork Tenderloin

Our Bourbon Pork Tenderloin is tender, tasty and an amazing main dish. The flavors are easy to pair with side dishes and will definitely impress your guests! You will need to marinate the pork for a few hours to overnight, so plan ahead!

You’ll need 2-3 pounds of Pork Tenderloin. That is usually two pork tenderloins. A lot of times, you can get two in a package. Trim the fat from the tenderloin and remove the silver membrane from around the meat.

Use a decent bourbon. It should definitely be drinkable, so not the cheapest you can find. No need to have the best special sipping bourbon, either, just need a very nice flavor to combine with the recipe. I chose Jim Beam for this recipe since it was what I had around (and saved the Blanton’s to go with dinner!)

The other items are normal stuff we have around all the time! Juice a lemon and have brown sugar, soy sauce, Worcestershire Sauce and garlic powder ready to go.

Making the Tenderloin

Mix the bourbon, lemon juice, brown sugar, soy sauce, Worcestershire Sauce and garlic powder. You might want to whisk it to make sure it all mixes together!

Add trimmed pork tenderloin to a gallon bag. Pour marinade over the meat, seal the bag and refrigerate for at least an hour to up to 24 hours. If marinating for longer than an hour, be sure to turn the bag so all sides of the pork get time with the marinade. If you do have two tenderloins in the bag, be sure to turn them so they don’t always touch in the same spots, or those spots won’t soak up as much flavor.

Heat grill to 350F. Cook the tenderloins, turning a couple of times, until internal temperature reaches 145F. This can take 15-20 minutes depending on the size of the tenderloin(s).

Allow to rest for 5-10 minutes, then cut into medallions for serving.

Wine Time!

A California Merlot is perfect with this. Pork and merlot are a natural match. The marinade will also blend in with the flavor of a higher tannin merlot, since the bourbon has many of the same barrel tannins you would find in the wine. Other possibilities would be Right Bank Bordeaux since this blend is highly concentrated in merlot grapes.

  • 1/2 cup Bourbon (or Whiskey if you prefer)

  • 1/4 cup Brown Sugar

  • 1/4 cup Soy Sauce

  • 2 Tbsp Worcestershire Sauce

  • 1 Lemon – Juiced

  • 1/4 tsp Garlic Powder

  • 2-3 pounds Pork Tenderloin (we used 2 to get to 3 pounds)

Directions

  • Trim the fat and silver membrane from the pork tenderloin(s)
  • Mix Bourbon, Brown Sugar, Soy Sauce, Worcestershire Sauce, Lemon Juice and Garlic Powder in a gallon bag
  • Add tenderloins to bag and marinate for at least a couple hours. Make sure to move the bag around so the marinade gets to all parts of the meat, especially if you have more than one tenderloin
  • When you’re ready to cook, preheat grill to 350F. Place tenderloin(s) on grill and cook until they reach an internal temperature of 145F, turning a few times during grilling to make sure they cook through evenly
  • Let roasts sit for 5-10 minutes after you take them off the grill. Slice into medallions and serve!
